Pumpkin and Herb Ravioli

Ingredients:


  • 200g Pumpkin (cut into chunks)
  • 200g plain flour
  • 3 eggs (lightly beaten)
  • 1/4 tsp nutmeg
  • 15 sage leaves
  • 15 parsley leaves
  • 126 melted butter
  • 60g parmesan cheese

Making Your Own Pasta

Carlo was able to show us how easy it is to make your own pasta! The extra effort pays off when you taste the pasta for the first time...no store bought pasta can beat this!

Ingredients:

  • 400g White flour
  • 4 Eggs
  • Pinch of salt
Method:
  1. Spread the flour so that it make a circle
  2. Make a whole in the middle of the circle for the eggs to go in
  3. Add the salt
  4. Knead the dough for as long as possible (try for at least 10min)
  5. The pasta must be smooth, firm and quite elastic
  6. Leave standing for 10 - 20 min
  7. Spread the dough and use a rolling pin to flatten
  8. The best thing to do is buy a pasta machine

Delicious vanilla cupcakes - with Ganache icing!

This cupcake recipe is simple, quick and the vanilla scent is very prominent! You have to try this at least once!

Ingredients:

  • 125g unsalted butter, softened
  • 125g sugar
  • 125g self raising flour
  • 2 eggs
  • 1/2 tsp vanilla extract (TIP: Use Madagascar Vanilla Bean paste to get a stronger vanilla scent)
  • 2 tsp milk

Method:

  1. Preheat oven to 200 deg. (fan oven 180deg.)
  2. Beat all the ingredients together - at the end add the milk one tsp at a time!
  3. Cook in the oven for 15 - 20min

Ganche Icing:
Nothing compares to really chocolate icing!

  • 250ml cream
  • 500ml good quality chocolate (if possible use lindt)
  1. Boil water in a small pot
  2. Put a round glass dish over the boiling water and add the chocolate
  3. Stir the chocolate until it melts
  4. Add the fresh cream
  5. Wait for it to cool before you decorate
